The delicate nature of many flowers means that steam distillation can not be used to extract the oil.
The flowers form a solid mass that the steam cannot penetrate, and therefore the heat damages the fragrance of the oil.
So a special two-stage process is used to extract what is termed an absolute rather than an essential oil.
This method does not damage the fragile flowers captures more of the true aroma of the flower.
