The delicate nature of many flowers means that steam distillation can not be used to extract the oil. The flowers form a solid mass that the steam cannot penetrate, and the heat damages the fragrance of the oil.
So a special two-stage process is used to extract what is termed an absolute, thereby capturing the delicate fragrance without damaging the fragile flowers or aroma.
